Greek Salad (Horiatiki)
The authentic Greek village salad — chunky tomatoes, cucumber, olives, and a slab of feta.
Ingredients
- 4 large ripe tomatoes, cut into rough chunks
- 1 cucumber, halved and thickly sliced
- 1 green bell pepper, seeded and sliced into rings
- 1 small red onion, thinly sliced
- 200g feta cheese (one thick slab)
- Kalamata olives, a generous handful
- 4 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt to taste
Instructions
- 1 Cut tomatoes into large irregular chunks. Place in a wide, shallow bowl.
- 2 Add thickly sliced cucumber, pepper rings, and red onion slices.
- 3 Scatter olives over the top.
- 4 Place the slab of feta cheese right on top — do not crumble it.
- 5 Drizzle generously with olive oil and red wine vinegar.
- 6 Sprinkle with dried oregano and a pinch of salt (go easy — feta and olives are salty).
- 7 Serve immediately with crusty bread to soak up the juices.
About This Recipe
Horiatiki — literally "village salad" — is Greece's most famous dish and a staple of every taverna menu. Unlike the shredded-lettuce version found elsewhere, an authentic Greek salad uses chunky, roughly cut vegetables with no lettuce at all.
The star is a thick slab of feta cheese placed on top, drizzled with excellent olive oil and sprinkled with dried oregano. Use the ripest tomatoes you can find — they make or break this dish.
