Ingredients
- 1 large eggplant, diced
- 2 zucchini, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 4 ripe tomatoes, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- Fresh basil leaves
- Salt and pepper to taste
Instructions
- 1 Heat olive oil in a large pot over medium heat. Sauté onion for 3 minutes until softened.
- 2 Add garlic and cook for 30 seconds until fragrant.
- 3 Add eggplant and bell peppers. Cook for 5 minutes, stirring occasionally.
- 4 Add zucchini and cook for another 3 minutes.
- 5 Add chopped tomatoes, thyme, and oregano. Season with salt and pepper.
- 6 Reduce heat to low, cover, and simmer for 25-30 minutes until all vegetables are tender.
- 7 Stir in fresh basil leaves. Serve warm with crusty bread.
