Ingredients

  • 1 large eggplant, diced
  • 2 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 4 ripe tomatoes, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. 1 Heat olive oil in a large pot over medium heat. Sauté onion for 3 minutes until softened.
  2. 2 Add garlic and cook for 30 seconds until fragrant.
  3. 3 Add eggplant and bell peppers. Cook for 5 minutes, stirring occasionally.
  4. 4 Add zucchini and cook for another 3 minutes.
  5. 5 Add chopped tomatoes, thyme, and oregano. Season with salt and pepper.
  6. 6 Reduce heat to low, cover, and simmer for 25-30 minutes until all vegetables are tender.
  7. 7 Stir in fresh basil leaves. Serve warm with crusty bread.
