Ingredients

  • 500g thick Greek yogurt (full-fat)
  • 1 cucumber, grated
  • 2-3 cloves garlic, finely grated or minced
  • 2 tbsp extra virgin olive oil (plus more for serving)
  • 1 tbsp red wine vinegar or lemon juice
  • 2 tbsp fresh dill, chopped (or 1 tsp dried)
  • Salt and pepper to taste
  • Warm pita bread, for serving

Instructions

  1. 1 Grate the cucumber on the coarse side of a box grater. Place in a clean kitchen towel and squeeze out as much liquid as possible. This is important — skip it and your tzatziki will be watery.
  2. 2 In a bowl, combine Greek yogurt, squeezed cucumber, garlic, olive oil, and vinegar.
  3. 3 Stir in chopped dill. Season with salt and pepper.
  4. 4 Cover and refrigerate for at least 30 minutes so the flavors meld.
  5. 5 Transfer to a serving bowl. Make a well in the center and pour in a drizzle of olive oil.
  6. 6 Serve with warm pita bread cut into triangles.
