Ingredients

  • 3 large ripe tomatoes, sliced 1cm thick
  • 250g fresh mozzarella (buffalo if available), sliced
  • Fresh basil leaves
  • 3 tbsp extra virgin olive oil
  • Flaky sea salt
  • Freshly cracked black pepper
  • Balsamic glaze (optional)

Instructions

  1. 1 Slice tomatoes and mozzarella into even rounds, about 1cm thick.
  2. 2 Arrange alternating slices of tomato and mozzarella on a serving plate, overlapping slightly.
  3. 3 Tuck fresh basil leaves between the slices.
  4. 4 Drizzle generously with extra virgin olive oil.
  5. 5 Season with flaky sea salt and freshly cracked black pepper.
  6. 6 Add a drizzle of balsamic glaze if desired. Serve immediately at room temperature.
