Ingredients

  • 2 cups heavy cream
  • 5 egg yolks
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. 1 Preheat oven to 160C.
  2. 2 Heat cream until simmering.
  3. 3 Whisk yolks and sugar until pale.
  4. 4 Temper cream into eggs.
  5. 5 Strain, pour into ramekins, bake in water bath 40-45 min.
  6. 6 Chill 4+ hours. Torch sugar on top before serving.
