French Onion Soup
Rich, deeply caramelized onion soup topped with melted Gruyere.

Ingredients
- 6 large yellow onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp sugar
- 4 cups beef broth
- 1 cup dry white wine
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper
- Baguette slices
- 2 cups Gruyere cheese, grated
Instructions
- 1 Melt butter with olive oil. Cook onions 45-60 minutes until caramelized.
- 2 Add wine, scrape browned bits.
- 3 Add broth, thyme, bay leaf. Simmer 20 minutes.
- 4 Ladle into oven-safe bowls, top with bread and cheese.
- 5 Broil 3-5 minutes until bubbly.
