Ingredients

  • 500g fresh salmon fillet, skin removed, cut into 3cm chunks
  • 4 medium potatoes, peeled and diced
  • 1 leek, sliced (or 1 onion, diced)
  • 2 carrots, sliced
  • 800ml fish stock or water
  • 200ml heavy cream
  • 3 tbsp fresh dill, chopped
  • 2 tbsp butter
  • 1 bay leaf
  • Salt and white pepper to taste

Instructions

  1. 1 Melt butter in a large pot over medium heat. Sauté leek for 3 minutes until softened.
  2. 2 Add potatoes, carrots, bay leaf, and stock. Bring to a boil, then simmer for 12-15 minutes until potatoes are just tender.
  3. 3 Add cream. Stir gently.
  4. 4 Add salmon chunks. Simmer very gently for 5-6 minutes until salmon is just cooked through — it should flake but hold its shape.
  5. 5 Remove bay leaf. Stir in fresh dill. Season with salt and white pepper.
  6. 6 Serve in deep bowls with rye bread and butter.
